  • 2 Blocks of Halloumi, diced
  • 4 small courgettes, roughly chopped
  • 4-5 peaches, roughly chopped
  • Juice and zest of 1 lemon
  • 1 red chilli, finely sliced
  • Bunch of mint, finely chopped
  • 1-2 tbsp Greek honey
  • 1 tbsp pistachio, chopped
  • Pinch of rose petals
  • 2 tbsp olive oil
  • Pinch of sea salt and cracked black pepper

    Start by chopping up your halloumi, courgette and peach so that it is evenly sized and tossing together in a large bowl or dish with red chilli, mint, pistachio, lemon and oil. Finish with honey and rose petals and season generously.

    Allow the halloumi to marinade while you preheat your seasoned Le Creuset griddle.

    Next build your skewers by alternating halloumi, courgette and peach. Cook on the hot grill for 10-12 mins turning regularly for an even cook and caramelisation. Once cooked drizzle with any remaining marinade.

    Serve on a bed of green salad with a cold glass of Lillet and tonic on the side.
